Local dishes

What to try

These are the local dishes to order in and around Takayama, from beef and noodles to pickles.

Hida beef: at least 14 months in Gifu4

Hida beef box lunch: sliced beef over simmered vegetables and mushrooms

Hida beef

Beef from cattle raised in Gifu Prefecture for at least 14 months, prized above all for its marbling4.
Bowl of Takayama ramen with thin noodles, chashu pork, bamboo shoots and spring onion in clear soy broth

Takayama ramen

Thin, curly noodles in a soy-based broth5. The taste and ingredients vary from shop to shop5, so try a few bowls and compare.
Hoba miso: miso and Hida beef grilling on a dried magnolia leaf over a small burner

Hoba miso

Miso paste, green onions and shiitake mushrooms placed on a dried magnolia leaf and grilled over a portable stove on your table5.

Mitarashi dango

Soy-sauce-flavoured rice dumplings5, which Hida’s official tourism site calls the very first preserved food ever eaten.

Homemade soba

Noodle making is popular in the Hida area5, and homemade soba is the dish to look for.

Pickled red turnips

Bright and crunchy, pickled red turnips are a Takayama speciality5.

Kaiseki and Hida beef at your inn

If you’re staying in a ryokan, dinner may be your best Hida beef meal of the trip. Here’s what the inns say:

  • Kaiseki is the norm: a ryokan stay typically includes a formal multi-course kaiseki dinner6.
  • Around the hearth: a ryokan run by Dormy Hotels says its kaiseki of seasonal local specialities is eaten around an irori hearth, with charcoal-grilled Hida beef7 as the main course.
  • The beef upgrade: on one Takayama town inn’s half-board plans, a Hida beef kaiseki costs ¥3,3008 (about US$21) more than the basic kaiseki.

If dinner at your inn matters, compare the areas and places to stay in Takayama before you book. For grades, prices and where to order it, read the guide to Hida beef in Takayama.
