Origins and rules

Side by side

Japan’s government magazine lists Hida beef as a luxury brand alongside Kobe and Matsusaka beef3. Kobe beef adds a fixed marbling score and a longer minimum raising time, and far fewer cattle qualify each year.

What sets Hida beef apart?

Hida beef is known above all for its marbling1. Its bloodline goes back to the bull Yasufukugo, called the father of Hida beef, who sired more than 40,0003 offspring.

At Japan’s National Competitive Exhibition of Wagyu, held every five years, Hida beef won the Best Carcass Award two times in a row4.

How Kobe beef is defined

Kobe beef is wagyu from the Tajima strain5 of Kuroge (Japanese Black) cattle. The meat must be selected from Tajima beef and come from a heifer or a steer2.

In Japan, Kobe beef is one of the three big beefs5 (Sandai Wagyū), with Matsusaka beef and either Ōmi or Yonezawa beef.
